Spicy Beef and Parsnip Stir Fry

Wash and dice all vegetables.  The amount of meat recommended is for meal prepping purposes. You can increase or decrease depending on your needs.

Ingredients

2lbs Ground or thinly sliced Meat of choice (Turkey, Beef, Chicken)

1 - Large Green Bell Pepper

1 - Anaheim Pepper

1 - Onion

1 - Large Parsnip

3-4 - Tomatoes

Desired spices to taste

Directions

Heat about 1 Tbls of Avocado or Coconut Oil and brown the meat in a pan on the stove. Season meat as desired. While on med heat, add in onion and bell pepper mixing well. After a few minutes add in parsnips and tomato. Finish with little more seasoning, if desired, and mix well. Let cook for an additional 10-15min to allow flavors to mix. Enjoy!

Notes

This is a versatile recipe that can be eaten as is, used to fill lettuce wraps, or placed on a bed of lightly steam cabbage or quinoa. We like to use Real Salt, Black Pepper, Paprika, and Garlic Powder. To make this a spicier dish, add in 1 serrano or jalapeno pepper.
